Putting a resolution into action…

Last night I woke with a start at 2am, as a random thought suddenly clicked into focus. I’d wondered a couple of times lately why the elderly chest freezer in the garage, which I’ve been meaning to defrost for months, had been switched to “super”, so I grumpily kept switching it back to normal. Maybe one of the girls needed to cool something rapidly & forgot about it? Maybe one of the cats trod on the switch?

No. In the dark of the night I realised that it was so iced-up it was running constantly, on “super” because normal just wasn’t maintaining the temperature any longer as warm air leaked in around the iced-up seals. So defrosting it suddenly leapt to the top of my “to-do” list & first thing this morning I was out there, hauling the contents out & stuffing them into a vast assortment of cool-boxes and insulating wraps – mostly old wool blankets. Luckily everything was still absolutely solid.

Then it struck me; oops, I had no idea how long some of the contents had been in there. It was high time for a good sort out… This freezer’s been great at keeping things very, very cold, but it is reaching the end of its expected life & showing the strain somewhat; I should be running the contents down & saving up ready to replace it within the year. So whilst it was defrosting enough to scrape the rest of the built-up ice off gently, I ran down to the market and invested in a notebook.

As stuff went back in, I logged it. I thought I only had a couple of packs of meat or fish in there; actually, there were 20-odd items. There’s cheese and butter. I thought I’d used the last of our home-grown beans up over Christmas, but there were 3 more bags in there. I’d completely forgotten the bags of grated golden courgettes, intended to bulk out soups & stews. There’s enough apple & pumpkin in the bottom to sink a battleship, and several bags of roasted butternut squash chunks. All of it carefully, lovingly & organically grown…

There’s no huge rush to use up the things I know only went in there a month or two ago, especially not as we still have trays of wrapped apples and several large squashes to eat up first. And the meat, not to mention the cheese, will see us through the next couple of months with very little need to visit a supermarket; the idea will be to use something from the freezer every other day at least. If I had a New Year’s resolution at all this year, it was to use up stuff that we already have; admittedly I was thinking of fabric & yarn, but it works across the board really. Here’s my chance!

Some of the other things had definitely been in there for longer than I cared to remember – raspberries, blueberries, & blackberries from 2018 or before, all of them market bargains or foraged from the hedgerows.  So I decided to make “Freezer Jam” with them, rather than let them go to waste.

I weighed the bags of fruit, then an appropriate amount of sugar – a little less than the total weight of the fruit; I don’t like my preserves too sweet – then chopped up the very last of this year’s quinces, hoping they’d provide at least a little pectin to set the jam. I chucked it all into my preserving pan & let it all melt down together. At this point I realised that some of the “blueberries” were in fact sloes, so had to stop & push the whole lot through a colander to remove the stones. But the taste was really gorgeous; deep, dark & tangy, well worth the extra work!

So now we have 5 full-size jars and 2 small ones of “Freezer Jam”. And yes, it seems to be setting just fine. When I made the Medlar jam, I said I hadn’t expected to be making jam in December. Well, I really hadn’t expected to be making it in January too!

That said, there’s a bag of Seville oranges in the conservatory awaiting my attention…

Enough already!

I’m shattered. We’ve been lucky enough to have had a wonderful apple crop from the two big trees (an elderly Blenheim Orange and a Russet) this autumn; I remember worrying in Spring that it wasn’t getting pollinated, as I couldn’t see any bees on the blossom. However a couple of months later the kiwi fruit plant was humming with pollinators, so loudly that you could hear them from the road, so they are still out there somewhere.

IMG_3767 A huge apple crop is a mixed blessing; they need to be dealt with as soon as they fall, especially if they don’t have a soft landing, as many of ours don’t, and circumstances just didn’t allow that this year. So a young friend’s pigs benefited from quite a few sacks of windfalls.

We’ve filled all our wooden apple trays, and the freezer’s bursting at the seams. Some have been dehydrated, and many turned into chutney or a base for other jams. Those neighbours who didn’t see us coming in time have been issued with carrier bags full. The garden’s littered with windfalls again and I still have a big basket of undamaged hand-picked apples to process. It’s amazing how many interesting apple recipes there are out there to try; Toffee Apple ice-cream is a new favourite! But the best news is that the windfalls have attracted a hedgehog back to our garden, after several years of not seeing any evidence of them.

So the arrival of a large crop of tree-quinces too has not been greeted with unalloyed joy, delightful though they are! We had just started picking them – they’re usually a little later than the apples – when a gale hit last weekend and brought most of them crashing down. They may have been ready, but I wasn’t! Believe me, quinces are much harder than apples to peel & chop, even assisted by a food processor. My hands are aching! But the taste of Quince, Pineapple & Rosemary marmalade makes it all worthwhile… And I’m almost out of re-used jamjars again, despite a kind friend donating 3 large bags full.

I’ve been up to some interesting projects over the summer and will post more about those shortly. I’ll also do a d-i-y Christmas Cracker tutorial, as promised last year. Now the evenings are dark again, I can mysteriously find time to sit at the computer again, rather than going for lovely long walks at the riverbank!

Making the most of the season!

…wouldn’t go amiss! Those of you who frequent the Old-Style MSE forum may have noticed that I’ve gone way over on my grocery budget this month, and I’m actually at a bit of a loss to explain it. That probably means it’s a combination of factors, starting with me not paying proper attention to what I’m buying/growing & cooking. There’s also definitely an element that basic foodstuffs have been steadily creeping upwards in price, downwards in quantity and in some cases vanishing altogether from the easily-available supermarket shelves.

Anyway, one of the best tools I have for keeping costs under control is the meal-plan. I used to plan the week’s meals on a Friday morning, when I did the main grocery shop at our local market, but things have changed; some stalls have gone altogether, and some no longer trade on a Friday but others only then, so most weekends I’ll need to pay more than one visit to the market. And of course I work a number of weekends, through the warmer months. So it’s all got a bit chaotic and I need to impose some self-discipline after we had a number of large bills to pay this summer, mostly on the motor & moggy maintenance front.

So I’m going to try to post my weekly meal-plans up here, along with my usual ramblings, and stick to them! Most of the time now I’m just feeding four adults; two omnivores and two pescatarians. The girls will often cook a “main” dish for themselves, though they’ll usually share our vegetables & any carbs, but I try to make sure there are resources available for them to make things with. “HG” stands for home-grown, “HM” stands for home-made, and I’m only planning to list the “mains” – puddings are mostly yogurt or fresh fruit, lunches are HM soup or salad, or poached eggs on toast (though our chickens are currently in the moult, so we’re getting one egg a day out of 10 birds) and breakfasts might be pancakes with fruit, porridge with HM apple butter or crab-apple jelly, or toast made with “good” bread – I’m working on a new & hopefully more palatable sourdough starter right now, thanks to Sharon of Learn Sourdough.

This week’s plan:

  • Saturday: lamb or sweet potato tagine (using leftover lamb) with bulgur wheat, HG beans, carrots & courgette.
  • Sunday: roast chicken/roasted veg with roast potatoes, broccoli and HG carrots
  • Monday: Macaroni & cauliflower cheese & baked beans – beans possibly HM., lots of HG tomatoes to use up!
  • Tuesday: Baked potatoes, sausages, eggs (if any!) & stir-fried HG veg
  • Wednesday: chicken curry/lentil dahl with rice – frozen veg? Depends…
  • Thursday: Sausage/bean casserole with any potatoes I can lay my hands on, HG or otherwise, hopefully HG beans & carrots.
  • Friday – fish dish of some kind, depending on what the market fishmonger’s got at a good price, and whether the boats have been out. Trout sounds good!

I’m hoping to do some more preserving, if the weather plays ball and I can get out for some more blackberries & crab apples. Looks to me like a few more jars of jelly/apple butter would come in handy to get us right through to next summer, but then I’ll move onto chutney. So – will I be able to keep to my self-imposed budget in October? Watch this space…

The time has come…

… to pick up my long-neglected keyboard again. Life has started to calm down a little; the kittens are nearly 6 months old now and not quite so relentlessly cute and playful. My mother has moved, and despite other people’s worries about her leaving her lovely “sheltered” flat, is very much happier in her little bungalow, with a garden she can sit out in, and family & friends close by. I have come to the end of my summer shows, and am starting to move surplus stock on as most of my trading “dates” from now on until next spring are indoors, which means having not much more space than a tabletop. The allotment & garden are in full production and now I need to swing into action on the preserving front. It’s not been such a good year for apples & quinces, but the hedgerow fruits seem to have done rather well.

No. 2 son staggered through the door last night, having done a 12-mile training run whilst suffering from a raging cold, and begged for a lift back to the gym where he’d left his car. I wasn’t doing anything, and it was a chance to see him – he moved out (for the third time) a month or so ago – so gladly agreed. As I drove into the car park opposite the gym, my headlights lit up two little trees groaning under the weight of crab apples. So a good armful of those came home with me, whilst my son suddenly regained his athleticism and hurtled off into the night before anyone recognised him. This afternoon I went down to the old railway and liberated a tub of blackberries, and now a muslin full of boiled crab apples & blackberries, along with a sprig of rosemary from the garden, is dripping into one of my preserving pans to be jellied tomorrow. I must raid the stash of reclaimed jam-jars in the garage & clean them ready for use… Much though I’ll miss summer, and never want it to end, I do love this time of year!

Do the maths!

I was at the market in our County Town this morning when I saw a small crowd of people round a fruit & veg stall. They were inspecting a little tower of boxes dubiously. I sidled over, and saw a notice: whole box of strawberries – £2!

Well, irresistible! I checked with the stallholder; it really did mean a whole box, 20 good-sized punnets, for £2. “They’re going over,” he said. “You’ll need to pick your way through.” But the crowd were shaking their heads and wandering off. “Half of ’em are mouldy!” one woman huffed indignantly. Another lady & I looked at each other and laughed; the woman evidently hadn’t worked out that if half of them were no good – and it certainly wasn’t anywhere near half – you would still be getting 10 punnets for £2. Which is quite a bargain!

So I somehow managed to carry the box, mostly balanced on my head, back to my van, whilst dragging my shopping trolley behind me. My mother & I polished off most of one punnet for lunch, and I gave two more to one of my brothers, who happened to appear at an opportune moment. So 17 punnets came home with me.

What to do with 17 punnets of strawberries? I rounded up every jar I could find a lid for and made a massive pan of jam; 11 jars, 4 of them 2lb-ers. I didn’t have any preserving sugar, and strawberries are low in pectin, but I did have these:

…which are full of the stuff. So I boiled up a pan of apples & quinces until really soft, then strained them through a muslin, then chopped the strawberries into the resulting juice and added an equal weight of sugar. Discarding the bad ones as I went, 9 punnets-worth half-filled the pan (it’s a BIG pan) which is enough as I didn’t want it to boil over.

6 punnets-worth have been sliced into my dehydrator; dried strawberries are good in muesli, or yogurt. There’s one punnet of decent berries left in the fridge, and one punnet made its way to a friend.

Altogether, from the 17 punnets I brought home, there were 2½ punnets of debris to throw out – mostly into the chicken run, as they love strawberry tops. So the best part of 14½ punnets, plus the 3 that went elsewhere, were good to use; way more then half! 11 pots of jam for £2, a bit of sugar and some energy… still seems like a good deal to me!

 

There are times…

…when I have neither the time nor the heart to make much. September’s been a full-on month, with several commitments that I felt I couldn’t try to wriggle out of, whatever else was going on, a couple of vague attempts to make some money towards the festive season, and another heart-lurching health challenge for my elderly mother.

And it’s harvest time; my absolute favourite thing to do, ever, is to go foraging in our hedgerows, with the sun on my back, birdsong in my ears. Yesterday I managed a short run out to the woods, and came back with a basket half-full of little yellow crab-apples, a handful of blackberries (which, sadly, have started to rot on the vines, thanks to the rain & grey skies) sloes & rosehips. There are apples & quinces coming down in the garden, too. Yesterday evening & all day today, I haven’t been outrageously busy, so I’ve managed to carve out the time to chop & boil up the two quinces that had split, the crab apples and the little blackberries. Then to let the mush drip all night, add sugar and boil up until “wrinkly” today. Luckily I had a lot of clean jamjars to scald, too, with new lids.

So now there are 8 jars of lovely deep-pink Quince & Crab-Apple Jelly (recipe here) cooling on my kitchen table, and I feel as though my feet have touched the ground again… but there’s a good chance that I’ll need to make a quilt soon, too, as a house-warming  present! Fingers crossed for them…

A whole New Year!

Welcome to 2016! Wishing you all a very happy one…

There’ll be more making, more baking…

My main resolution for this year is – to write more. A lot more; my life seems to have frayed at the edges or possibly unravelled to the point where I hardly ever get the time, or have the space, to make anything worthwhile any more, but I don’t need a lot of space or time to spin some words together. It doesn’t matter if I’m 26 miles away from my sewing machine or spinning wheel, as I was yesterday; as long as I have a pen & some paper, or better still my iPad, I can write something. Even if it’s something that no-one else will ever read; that almost doesn’t matter. Even if it’s just a few words scribbled on the back of a receipt…

I’d like to try to write something here at least once a week. I’d very much like to get paid for writing again, but I had to let those threads drop a few years back, and am not in a position to commit to imminent deadlines at the moment. And I’m not able to do research or develop any new expertise at anything just now, and real life continues to confound my ability to keep up with the plot, so my long-held ambition to write a novel (oh, and get it published) doesn’t stand much of a chance either.

I’ve managed to keep most of my preserves & ferments going over the last year, mainly by persuading my darling daughters to take up the reins whenever I’ve been snatched away by fate. They are developing their own techniques & preferences now and I’m loving the results; ginger beer, kombucha, kefir and kimchi. But I didn’t get nearly enough foraging in, or a chance to learn more about the unnoticed gifts that we’re surrounded with. I’m still rescuing and refurbishing stuff and making a few bob selling on what we ourselves can’t use, but many more people have leapt onto that bandwagon and it’s getting harder and harder to turn an honest penny. Not to mention that I now have nowhere to store stock, or work on it…

So I’ve given away a lot of excess stock, to something that’s a very good cause; three van-loads so far, and more to follow. I live in hope of finding the conservatory floor again one day, and the shelves in the porch; then I’d be able to store sensible amounts of wood when it’s available for free, as it very often is!

Things need to change! But maybe I can’t impose that change from on top, and it needs to happen from the bottom up, so I will start building the future with words, just a few at a time!

April daze…

If there’s one thing I wouldn’t have expected to spend a significant proportion of today doing, it’s preserving. It’s April; this is supposed to be the Hungry Gap… But what else you do, when a greengrocer hands you a bag of FREE strawberries?!

£10 filled my shopping trolley to the brim at lunchtime today, as the market traders prepared to pack down until next Friday; all the stuff that’s not going to last is sold off for 50p, and some of it just gets given away. I’d already bought some strawberries, which are ridiculously cheap at the moment, and various other bargains, and as I packed them into the top of the trolley he just handed me a bag of slightly-battered strawberries with a cheery, “‘Ere, luv, you can ‘ave these too! Use ’em up.”

I didn’t have any pectin, and strawberries aren’t very high in it, so strawberry jam can be a bit of a bu&&er to set. But what I did have was a big bag of apples that I’d picked up cheap two weeks before that I hadn’t got round to doing anything sensible with. So I chopped them roughly, leaving the skin, cores & pips still in, boiled them up & simmered them for half an hour, with the bottom of the pan covered with water & the lid tight on. Then I strained the resulting juice off & crossed my fingers that enough pectin would have migrated into the water to give the strawberries a boost; I actually only used half of it, because that looked like enough. So I chopped the strawberries, removing any rough bits – there was actually very little waste, they were’t very far gone – weighed out the same amount of sugar, poured both into the warm hopefully-pectin-solution along with the juice of a lemon and stirred until the sugar had dissolved.  Then whacked the temperature up & boiled until a few drops on a cold plate formed wrinkles when pushed. It DID happen, and it didn’t take too long – success!

It just so happened that instead of my usual scrabble for jam-jars in June, I picked up a big box of 57 pristine, probably brand new, 1lb jars complete with lids at the Tip a couple of weeks ago for £2. I’m assuming that one of the Country Market ladies has sadly given up or passed away, but I’m very happy to be able to use what she’s no further use for. So my usual mad dash around the garage shelves, hunting for enough random-sized jars & matching lids that haven’t gone rusty, wasn’t necessary; I just washed some from the box, rinsed them & popped them into a hot oven to sterilise.

Two and a half jars of strawberry jam made. But what to do with the rest of the pectin-water and the apple pulp? A quick check of the spice cupboard, and I knew I had enough to make some Apple Butter; three and a half jars of it, in fact!

So that’s got the 2015 store cupboard off to a flying start, quite a lot earlier in the year than I can ever remember making jam before. Not that it’ll have to be stored for long; we’re already into the first full jar, having polished off the half-jar! All sorts of things seem to have got off to a flying start this year, with the lovely warm weather we’ve been having. Mid-week I had cause to drive through the middle of our county on the country roads, which I had just about to myself. It was simply stunning; the trees were a symphony of blossom, from clouds of blackthorn through blushing apples to rosy-red hawthorn and cherry-blossom. And underneath the trees, there are still acres of primroses, but also bluebells, not quite in full bloom yet but near enough. I’m not sure I’ve ever seen so much blossom at one time; it’s a fantastic show. The sea was aquamarine & sparkling; if I’d had a camera with me, I’d never have got to my destination!

Looks like I’m going to need a few good quince recipes, too…

“Nostalgia ain’t what it used to be…”

I’d planned to write something about – well, something else. But instead, I’m inspired to write again about Why Vintage? Life takes these funny twists & turns sometimes…

One of my husband’s favourite sayings is, “Nostalgia ain’t what it used to be…” meaning that wistful looking back to an imaginary golden age is just that – more to do with imagination than reality. And I think it’s true that all throughout history, and probably prehistory, people have just muddled along as best they can & simply tried their best to stay afloat one way or another, but that’s not what we see when we look back. Looking back at the Roman invasion of Britain, we see fit, bronzed warriors in metal-studded miniskirts building long, straight roads in the summer sun, not miserable conscripts with dripping noses scrabbling in the winter mud, wishing they could wear woollen breeks like the natives, or tubby merchants gleefully piling up their denarii in their slave-driven centrally-heated homes. When we look back at the Tudors, we see the world-spanning voyages, the introduction of potatoes to Europe, Shakespeare penning his wonderful plays and poetry, and the fine, fantastical & wildly-impractical costumes of the wealthy, not the probably-somewhat-itchy home-dyed, spun & woven everyday wear & pease-pottage cuisine of the peasantry. When we look back at the 1940s, we see the slender waists, Victory Roll hairdos and glamorous lipsticks, not the look of dismay at the idea of Woolton Pie for tea again, and the mind-numbing terror of hearing, or worse still, ceasing to hear the whine of the doodlebugs…

Yesterday I had a conversation with my nearly-89-year-old mother. She cannot for the life of her understand why people would want to live in the past, in any way, shape or form, and how I can possibly make any money out of it. She remembers all too well the hard work, the misery of being so very cold but unable to afford to heat the house, or even the room she was sitting shivering in with her newborn baby; the sheer unrelenting effort of making sure that the wood was chopped, the garden crops were picked & processed before they spoilt (no matter what else had to be done) everything dusted, & polished & swept daily and all our clothes clean, starched & pressed. Yet I know of, and have sold things to, individuals, couples and even families whose homes & indeed lives are a shrine to a bygone era, who are looking for wooden dollies or tongs for their washing tubs, slate or marble slabs for their larders, carpet beaters for their pure-wool rugs. And I have a lot of sympathy with them. My mother has lived all her long life in the sparse bosom of the Church of England, and has no real sense of the tremendous disconnectedness of the world that we’re living in now. I think many of my customers are hoping to return to a time when it felt like life had some meaning, apart from just working to get as much money as possible in order to spend it as quickly as possible.

Some of the people I talk to are 20th-century re-enactors, rather than actually trying to live the life of our forebears all the time. But if I ask any of them why they do it, they all say that it’s the Blitz Spirit, the sense of everyone pulling together, & the fairness of rationing. They’ll mention that everyone was healthier, that things were built to last & be mendable, and the sheer exhilaration of mastering the dances. The fun of tinkering, of making things for yourself, and of rescuing good things that can still be useful, usually comes into it too. Possibly even the feeling of living on the edge, that every mission might be the one you didn’t come back from, that any infection might be fatal, that every dance might be your last, so that it all really meant something. And in some indefinable way, that life really was a lot simpler for having far fewer choices. Which is all so very far from how things are in our society now…

Affordability comes into it, too. None of them have been forced to live in the past by being broke & unable to afford modern conveniences; it’s a conscious choice they have all made, and sourcing authentic clothing, fabric & household items is rarely cheap, unless you’re very lucky. Most of our customers do have decent jobs or trades. But if you spend £50 on an old hand-cranked sewing machine, and keep it somewhere dry, brush it out & oil it regularly, it will keep going & doing the job it was designed to do for another hundred years. Your £25 mangle will still work long after your £250 tumble dryer has given up the ghost. Your preserving jars still work in a power cut. So it makes sense to invest a bit in good kit, to save money in the long term. You will need more time, to do things in the old-fashioned way, but it’s quite easy to find if you can give up some TV-watching, FaceBooking or gaming.

And I don’t see that it’s so very different to removing yourself to another country, which often seems to exist more in the mind of the ex-pats than in reality. The Spain with a great past and a wonderful future, where the sun shines all the time that the fireworks aren’t crackling, is not the same Spain where most young people have no chance of ever getting a decent job, or where you can suddenly find that you don’t in any sense own the property you handed over your life savings for. As L.P. Hartley put it in The Go-Between, “”The past is a foreign country: they do things differently there.” Maybe in some ways, they did things better, although not perhaps in the context of the book. Or the War, or the discrimination, or the lack of universal health provision…

Or maybe, we should be doing things better, so that people don’t feel the need to escape into the past. A lot of people don’t want to live in a constant electronic smog, or on mass-produced food with dubious ingredients, or wear ill-fitting semi-disposable garments, just because everybody else does and it’s all that’s available now. Some people even, to estate agents & local authorities’ horror, actually want a reasonable-sized garden, to grow & raise edible things in, not just a tiny outdoor entertainment space.

Is it nostalgia? Is it daydreaming? Or is it imagining a better, calmer, more creative & productive world? A world where things were built to last, out of the best available materials, with real craftsmanship, even if they cost more to start with? A world where fashion flattered the female form, rather than tried to erase it? Where bedlinen lasted for lifetimes, rather than months? Where fun didn’t consist of blowing up or running over imaginary opponents in a virtual maze? Where outdoors was not a scary place best paved over?

A world that could exist, bits of which have existed; a world that could made to exist if enough of us have the will to bring about the change?

Week 2 – what I did, what I didn’t, and what’s new…

Having set myself this little challenge, how did Week 1 go?

Most of it has been used up. The marrow’s still waiting to be curried, but doesn’t appear to be in any hurry. Nor are the shallots, which are scheduled to be used up in tomorrow’s Bank Holiday supper. Two small aubergines from the tray of 6 are still waiting too, but haven’t developed any bad patches so are still good to go.

This week’s haul includes 3 more lots of tomatoes; one of 50p salad toms, for lunches, and two 50p lots of the big vine tomatoes for (yet more) soup. 4 corn-on-the-cob for £1, more celery – can you have too much? Surely not! – for 50p, 5lbs of Jersey Royal potatoes for 50p, 10 lemons & 10 limes for £2, which will make lemon & lime curd, with some home-laid eggs. I also bought a big butternut squash for £1, as last week’s has already been used. I could have bought either of two varieties of cabbage, but didn’t; I still have an uncut one from Friday. There were no carrots or parsnips on offer, but I have enough carrots & one big parsnip should keep us going all week, unless I want to do a rosti, in which case I’ll visit the greengrocers. Two punnets of small strawberries were down to £1 each and will go into jam with the blackberries I’m about to go & gather in before the stormy weather makes them rot in the hedgerows. If no-one’s eaten them already, that is! The 50p peppers will almost certainly be eaten whole & raw, like apples, by our tame vegetarian, and one of the 50p leeks has gone already.

I’ve also made a big jar of kimchi, started off a ginger beer plant, and made 3 bottles of blackberry & apple cordial. Plus I bought two full carrier bags of apples towards the end of the car boot sale on Tuesday, reduced down to 50p each, to make apple butter with this week, as our crop isn’t going to be up to much this year.  And another trader has offered me a sack of windfalls, from her mother’s garden – lovely jubbly! The more the merrier.

The downside? I’m running out of reclaimed jam jars already…
